As a reminder that elevation alone does not define quality, this lot from Torcaza shines as one of the year’s most consistently outstanding coffees. Torcaza itself is situated just below Estación and Poro, and is one of the most prolific areas of Finca Sophia. Named after the native Torcaza-Aliblanca, or White-winged Dove, found throughout Finca Sophia and the Tierras Altas of Panamá. This bird and the Quetzal were the inspiration for the Finca Sophia logo, first introduced in 2014.

| Process Description: | Cherries from Torcaza at 2026 MASL were carefully harvested April 4, 2025 and washed to remove impurities and floaters. After pulping, the beans underwent a 36-hour dry fermentation, followed by a thorough washing to ensure the complete removal of mucilage. They were then taken to African beds for 10 days of pre-drying, before completing their slow and even drying in the darkroom until reaching 10.5% humidity. |
