Showing that Torcaza can produce elegant natural profiles in addition to washed profiles, this lot was harvested just a couple of days after FSA-04 and FSA-05, and processed as a traditional natural. What we love about this particular lot is that it shows elegant tropical fruits in addition to varietal character.

| Process Description: | The cherries for this lot were harvested from Torcaza at 2026 MASL on April 8, 2025, carefully washed and meticulously selected. Once selected, they were taken to African beds to begin the drying process, where they remained until reaching approximately 17% humidity after 17 days. They were then transferred to the darkroom to complete the final drying, achieving a stable moisture content of 10.5%. |
