This lot and its sister lot FSA-08 were harvested on April 9, from Estación, named after the weather station located in this area that has been capturing data for us on and off for many years. Estación is one of our highest-elevation lots, reaching 2,090 MASL, and excels at producing top selections. FSA-07 was picked and harvested as a washed process, while FSA-08 was picked and processed as a natural process, making these two lots a natural pair.

| Process Description: | Cherries from Estación at 2090 MASL were carefully harvested on April 9, 2025 and washed to remove impurities and floaters. After pulping, the beans underwent a 36-hour dry fermentation, followed by a thorough washing to ensure the complete removal of mucilage. They were then taken to African beds for 12 days of pre-drying, before completing their slow and even drying in the darkroom until reaching 10.5% humidity. |
