| Process Description: | The cherries for this lot were harvested from Estación at 2090 MASL on April 9, 2025, carefully washed and meticulously selected. Once selected, they were taken to African beds to begin the drying process, where they remained until reaching approximately 17% humidity after 15 days. They were then transferred to the darkroom to complete the final drying, achieving a stable moisture content of 10.5%. |
