The third coffee in this trio, FSA-011, was harvested in Estación on April 10 and crafted from a cherry selection aimed at showcasing floral, effervescent notes with a touch of melon. While FSA-010 leans into sweetness and ripeness, FSA-011 stands out for its crisp, vibrant brightness. Also a natural process, it serves as a connective bridge between the other two lots in the set.

| Process Description: | The cherries for this lot were harvested from Estación at 2090 MASL on April 10, 2025, carefully washed and meticulously selected. Once selected, they were taken to African beds to begin the drying process, where they remained until reaching approximately 17% humidity after 17 days. They were then transferred to the darkroom to complete the final drying, achieving a stable moisture content of 10.5%. |
