Piedra is named after the large rock that marks the entrance to Finca Sophia. Back in the early days we had a sign here welcoming visitors to the farm, but with improvements to the road we eventually moved it to the driveway near the campamento. Piedra is a unique microclimate that receives less direct sunlight due to the fact that it is at the base of a ravine, less exposed to the rays that hit a little farther up. Hence, development in Piedra tends to be slower and on par with lots that are at the highest reaches of the farm. We loved this lot because of its outstanding sugary sweetness, in addition to classic washed Geisha character.

| Process Description: | Cherries from Piedra at 1973 MASL were carefully harvested on April 13, 2025 and washed to remove impurities and floaters. After pulping, the beans underwent a 36-hour dry fermentation, followed by a thorough washing to ensure the complete removal of mucilage. They were then taken to African beds for 7 days of pre-drying, before completing their slow and even drying in the darkroom until reaching 10.5% humidity. |
