Finca Sophia's very first Honey lot! After 18 years we finally gave it a try and loved the gorgeous cup quality, perfectly straddling washed and natural profiles. At once clean and crisp, FSA-13 has layers of honey, pineapple, and more. Adjacent to Piedra, Ciprés shares a similar microclimate, and is named after a small stand of cypress trees growing in the area. These trees can provide excellent shade, but also tend to dry out the soil, so we have limited their introduction to Sophia to areas where they do not interfere with coffee production. In this area the coffee trees have adapted and produce excellent quality despite, or perhaps because of, the stress of their thirsty neighbors.

| Process Description: | Cherries from Ciprés at 1956 MASL were harvested on April 21, 2025, washed to remove impurities and floaters, and carefully selected. After pulping, the beans, still covered in their mucilage, were directly placed on African beds, skipping fermentation. Over the following days, they dried slowly and evenly under careful monitoring until reaching about 17% humidity after 11 days. They were then transferred to the darkroom to complete the final drying, achieving a stable moisture content of 10.5%. |
