The first of the Trilogy series, FSA-015 is a washed process coffee, perfectly encapsulating the essence of Finca Sophia washed Geisha — huge florals, bergamot, and mandarin. We felt that the Trilogy lots, all harvested on the same day from Poro (2,094 MASL) but processed differently, made a great case study in the impact of human influence on terroir, as well as a reflection on the fortitude of terroir itself. Each of these coffees clearly resembles the others, but with subtle, intentional differences.

| Process Description: | Cherries from Poro at 2094 MASL were carefully harvested on April 28, 2025 and washed to remove impurities and floaters. After pulping, the beans underwent a 36-hour dry fermentation, followed by a thorough washing to ensure the complete removal of mucilage. They were then taken to African beds for 7 days of pre-drying, before completing their slow and even drying in the darkroom until reaching 10.5% humidity. |
