The second of the Trilogy coffees, FSA-16 is a natural process coffee that seeks to capture sweetness over florality. The result is a coffee that has a ripe quality the other two lots do not have, but in a fresh, juicy style — think strawberry-laden Pinot Noir.

| Process Description: | The cherries for this lot were harvested from Poro at 2094 MASL on April 28, 2025, carefully washed and meticulously selected. Once selected, they were taken to African beds to begin the drying process, where they remained until reaching approximately 12% humidity after 30 days. They were then transferred to the darkroom to complete the final drying, achieving a stable moisture content of 10.5%. |
