The third coffee in the Trilogy, FSA-17 is a natural process that is intended to show florality and yellow fruit over sweetness and red fruit. The result is a coffee leaning toward citrus and yellow stone fruits, with an effervescent, crisp acidity.

| Process Description: | The cherries for this lot were harvested from Poro at 2094 MASL on April 28, 2025, carefully washed and meticulously selected. Once selected, they were taken to African beds to begin the drying process, where they remained until reaching approximately 12% humidity 30 days. They were then transferred to the darkroom to complete the final drying, achieving a stable moisture content of 10.5%. |
